The Hygiene Supervisor ensures that all work areas meet the sanitation and hygiene standards relating to food businesses of The Shop. He/she reports to the executive chef. Specifically, the Hygiene Supervisor will
• Propose and maintain minimum hygiene standards in all work areas in all branches
• Be responsible for effective and efficient hygiene records, manuals and monitoring tools
• Identify key areas of risk in various food operations and initiate remedial actions
• Be responsible for training and coaching of staff on the proper food handling practices
• Be responsible for work areas being clean and orderly
• Conduct daily checks on the personal, environmental and food hygiene conditions in all food handling areas and report findings to management
• Supervise stewards and cleaners in their daily work
• Plan, organize and supervise regular deep cleaning of all work areas
• Ensuring all employees maintain a neat, clean and well-groomed appearance
• Manage staff uniforms and monitor quality of laundry firm
• Manage and monitor food safety of pest control by external firm
• Manage stock of cleaning supplies and equipment
• Manage stock of food packaging and non-consumables
